I hate cake. When I was little, I used to pretend to eat cake and then throw it away when no one was looking. I did this at friends birthday parties and even my own. I don't know why I never told anyone I didn't like cake. I think I just wanted to like it. Everyone likes cake. How could I not like cake? Well. I just don't. I eventually spoke up, and every year since I was 16 years old, Ihave had brownies on my birthday. I like brownies. I love brownies. It is not the same as cake. Cake. Why does everyone like cake? I have often wondered if it was possible for me to liek cake. I then thought, perhaps if I try making my own cake, then I will like it. Guess what I found out?! I DO like cake! I have tried a few different types of cake and recently decided to bake a new one every month. most of them are not traditional flavors, but they are yummy ones.
1st attempt:
Pineapple Upside Down Cake
I first made this cake in 2013 on Valentine's day for my husband. Pineapple Upside down cake is one of his favorites and I thought it was a good place to start. It was pretty tasty. The original recipe was pretty good, but the frosting needed work. I added vanilla extract and pureed pineapple. Then, it was very yummy!!
The recipe is as follows:
Ingredients
3 c flour, and a little sprinkle for the pan
1 c butter softened
1/2 c butter, melted
2 1/4 c sugar
5 large eggs
1 tsp vanilla extract
2 tsp baking powder
1/4 tsp salt
1 1/4 c buttermilk
1 1/2 c packed brown sugar
2 20oz can pineapple slices in juiced, drained
pineapple buttercream frosting (recipe follows)
pecans (optional)
Pineapple Buttercream Frosting
2 sticks butter, room temperature
5-6 c confectioners sugar
1 c pureed pineapple or crushed pineapple in juice
Directions
Preheat the oven to 350 degrees F. Grease 2 (8 or 9 inch) round cake pans with cooking spray or butter then coat with flour.
In a large bowl, beat (using an electric mixer) 1 c butter until creamy. Gradually add the sugar, beating until fluffy. Add eggs one at a time, beating well after each one. Add vanilla, stir and set aside.
In a small bowl, combine flour, baking powder and salt. Add flour mixture to butter mixture alternately with the buttermilk.
Divide the brown sugar evenly into each pan. Pour the melted butter all over the brown sugar. Arrange pineapple slices and cherries on top of the brown sugar.
Pour equal amounts of batter over over the fruit and bake for about 45 minutes, Let cakes cool in pans for 10 minutes, then flip onto wire racks to cool completely. I suggest placing a towel underneath your wire racks to catch the juices from your cake. Every time I have made this cake there was a sticky mess everywhere.
Pineapple Butter cream Frosting
Combine ingredients using an electric mixer.
Assemble cake
Place one layer onto a cake plate, pineapple side up. Add frosting if you wish. Then place second layer on top of first, again pineapple side up. Frost the sides of the cake. Press pecans into the frosting.

I hope you enjoy this recipe as much as I did. It was a fun, new experience baking it, and it was tasty too. I will post the other cakes I have made at a later time. Right now, I have a baby who wants my attention.
